Влияние хитозана на продление срока хранения кисломолочных продуктов с Lactobacillus acidophilus | The effect of chitosan on prolonging the shelf life of lactic acid products with Lactobacillus acidophilus

Русский. Ацидофильная палочка Lactobacillus acidophilus широко используется в технологиях функциональных молочных продуктов. В процессе хранения таких продуктов важно, чтобы количество жизнеспособных бактерий оставалось максимальным. Для увеличения сроков годности кисломолочных напитков с L. acidophilus применяют хитозан в качестве пробиотика. Исследован процесс взаимодействия хитозана с лактобациллами с использованием стандартных методов определения активной и титруемой кислотности, КОЕ и расчетных методов определения лактозы и молочной кислоты. Заквашивали образцы восстановленного молока (0,15% жира, 3,2% белка, 5% лактозы)). В них вносили 1%-ный раствор хитозана в 10%-ной молочной кислоте. Применявшиеся концентрации хитозана - 0,0025; 0,005; 0,0075 и 0,01%. Хитозан с молекулярной массой 350 кДа, добавленный в стартовую культуру L. acidophilus в концентрациях от 0,005 до 0,01%, снижал активную и титруемую активность на 17-й день хранения. При данных концентрациях срок хранения кисломолочного продукта увеличивается в 2 раза по сравнению с контролем. Замедление образования молочной кислоты и сохранение высокого уровня лактозы в образцах, содержащих хитозан, стимулировало рост молочнокислых бактерий в кисломолочном продукте до 3,5*10E9 КОЕ/г и сохранение их содержания в процессе хранения до 2,1*10E9 КОЕ/г. В результате удалось увеличить срок годности кисломолочного продукта при сохранении хороших органолептических показателей. Выявленные свойства хитозана могут быть использованы в технологиях др. молочных продуктов.

Английский. Lactobacillus acidophilus is widely used in manufacturing technologies of functional dairy products. During the storage of such products, it is important that the number of viable bacteria remains maximum. To increase shelf life of fermented milk drinks with L. acidophilus, chitosan is used as a probiotic. The process of interaction of chitosan with lactobacilli was investigated for determining active and titrated acidity, CFU and computational methods for determining lactose and lactic acid. The samples of reconstituted milk (0.15% fat, 3.2% protein, 5% lactose) were fermented. A 1% solution of chitosan in 10% lactic acid was added to them. The concentrations of chitosan used were 0.0025; 0.005; 0.0075 and 0.01%. Chitosan of 350 kDa molecular weight, added to the starting culture of L. acidophilus in concentrations from 0.005 to 0.01%, reduced the active and titratable activity determined on the 17th day of storage. At these concentrations, the shelf life of the fermented milk product increases by 2 times compared to the control. Slowing down the formation of lactic acid and maintaining a high lactose level in chitosan containing samples stimulated the growth of lactic acid bacteria in the fermented milk product up to 3.5*10E9 CFU/g and the keeping of lactic acid bacteria content during storage to 2.1*109 CFU/g. As a result, it was possible to increase the shelf life of the fermented milk product while maintaining good organoleptic characteristics. The revealed properties of chitosan can be used in the technologies of other dairy products.
