Rationale for determining the nitrogen index of whey protein to assess the protein composition of milk powder | Обоснование определения индекса азота сывороточного белка для оценки белкового состава сухого молока

Английский. Four samples of skimmed milk powder (SMP) having mass fat content of 0.5% and different values of the whey protein nitrogen index (WPNI), namely from 1,4 to 6,0 mg/g, has been studied. The relationship between WPNI and the contents of whey and casein proteins was established. It was revealed that with an increase in the WPNI index the amount of casein proteins decreased from 30.4 to 27.2%. At the same time, the content of whey proteins also underwent changes, but solely due to the transformation of the ratios of the main whey proteins such as beta-lactoglobulin and alpha-lactalbumin. Studies have shown that the content of the mass fraction of protein in the dry product does not depend on the nitrogen index of whey protein, while the content of non-protein nitrogen in samples of SMP with high-temperature heat treatment (WPNI is not more than 1,4 mg/g) decreased by 0,06 percent points. Evaluation of the thermal class of milk powder allows us to determine the purposefulness of its use as the main raw material component for the production of dairy products, including foods of functional nutrition and intended for specialized purposes.

Русский. Исследовано 4 образца сухого обезжиренного молока (СОМ) с массовой долей жира 0,5% и индексом азота сывороточного белка (WPNI), варьирующим в интервале от 1,4 до 6,0 мг/г. Установлена зависимость между WPNI и содержанием сывороточных и казеиновых белков: с увеличением показателя WPNI количество казеиновых белков снижалось с 30,4 до 27,2%. При этом содержание сывороточных белов также изменялось, но исключительно из-за трансформации соотношений основных сывороточных белков бета-лактоглобулина и альфа-лактальбумина. Содержание белка в сухом продукте не зависело от WPNI, в то время как содержание небелкового азота в образцах СОМ с высокотемпературной термообработкой (WPNI не более 1,4 мг/г) снижалось на 0,06 п.п. Оценка теплового класса СОМ позволяет определять направленность его возможного применения в качестве основного сырьевого компонента для производства молочной продукции, в том числе продуктов функционального питания и специализированного назначения.
