The paper summarizes the contents of an OECD Symposium in which the adjustments and the challenges facing the food industries in the 1980's were discussed. The objectives of this symposium were, among others, to examine the current and future roles of governments and industry and the structural adjustments in the food industries; furthermore to explore the future orientation of food industries in the light of the recent and anticipated future developments in the technical, economic and social dimensions of their environment. A further economic factor likely to play a major role in determining the future structure of the food industry is the emerging science of biotechnology with its potential for changing dramatically both the sources of supply of the raw materials required by the food industry and the use of raw materials produced by the agricultural sector. However non-economic factors will also be significant in determining the future structure of the food industry. Changing economic and social conditions, and aspirations together with changing attitudes to work could have an effect on the size and organisation of businesses, particularly on the degree of centralisation and decentralisation of many of the large multinational food firms and conglomerates
