Английский. Our aim was to adapt Apostolatos technique to the determination of nitrogen in cereals. Samples were mineralized by acid digestion determining the ammonium resulting by the reaction of Bethelot. The optimum conditions for a reaction were established and changes were introduced to regulate the range of pH. The results show that this technique constitutes a sensible, fast and reliable answer to value protein existing in cereal improvement

I campioni venivano mineralizzati con digestione acida determinando l'ammonio risultante mediante la reazione di Berthelot.
