Composition of non-hayward varieties of kiwifruit grown in Italy

Английский. The composition of five varieties of kiwifruit (Abbot, Bruno, Elmwood, Gracie and Monty) was determined. It was confirmed that quinic acid, ascorbic acid, potassium, arginine and glutamic acid are chemical parameters that mostly affect the properties of this fruit. The highest quinic acid content (mean value 5.01 g/kg) was found in the variety Elmwood, the lowest content (mean value 3.40 g/kg) in Gracie. The variety Bruno had the highest ascorbic acid content (mean value 1549 mg/kg) and the lowest potassium content (mean value 3748 mg/kg), while the highest ascorbic potassium content (mean value 4616 mg/kg) and the lowest ascorbic acid content occurred in the variety Abbot. No appreciable differences in glutamic acid concentration were found between the varieties studied. Arginine content was much higher in the varieties Abbot and Bruno than in others. итальянский. E' stata determinata la composizione di 5 varieta' di kiwi (Abbot, Bruno, Elmwood, Gracie e Monty). E' stato confermato che i parametri chimici che caratterizzano questo frutto sono l'acido chinico, l'acido ascorbico, il potassio, l'arginina e l'acido glutammico. La varieta' piu' ricca di acido chinico (valore medio 5.01 g/kg) e' risultata la Elmwood; la meno ricca, la Gracie (valore medio 3.40 g/kg). Il piu' alto contenuto di acido ascorbico (valore medio 1549 mg/kg) e' stato trovato nella varieta' Bruno; il piu' basso (valore medio 433 mg/kg), nella Abbot. Il potassio e' decisamente piu' abbondante nella Abbot (valore medio 4616 mg/kg), mentre la varieta' a piu' basso contenuto di potassio e' la Bruno (valore medio 3748 mg/kg). Circa il contenuto di acido glutammico non si osservano differenze apprezzabili tra le varieta' studiate. L'arginina e' presnte in elevate concentrazioni nella Abbot e nella Bruno e in concentrazioni notevolmente piu' basse nelle altre tre varieta'. Infine, tutte le varieta' hanno presentato un contenuto di L-malico nettamente piu' alto rispetto alla Hayward
