Английский. The influence of nitrogen fertilization on breadmaking quality of tritordeum was studied in comparison with durum wheat and hexaploid triticale. The tritordeum genotypes showed high SDS-sedimentation volumes, seed hardness and yellow pigment content compared with triticale. Moreover, tritordeum and triticale possessed lower test weights and kernel weights, as well as higher hardness indexes than durum wheat. Nitrogen fertilization (0, 150 and 300 kg/ha) was found to increase protein content and decrease test weight and kernel weight

L'influenza della concimazione azotata sulla qualita' di tritordeum da panificazione e' stata studiata attraverso il paragone con grano duro e triticale esaploide. I genotipi di tritordeum mostravano volumi di sedimentazione SDS, durezza dei semi e pigmento giallo elevati rispetto al triticale. Inoltre, tritordeum e triticale possedevano pesi della spiga e della granella inferiori, come pure indici di durezza piu' elevati di quelli del grano duro. Si e' riscontrato che la concimazione azotata (0, 150 e 300 kg/ha) aumenta il contenuto in proteine e dimimuisce il peso di prova e quello della granella
