Use of Unifom S-89 instrument for meatiness evaluation in pigs at a pig progeny testing station

The figures of fattening performance, carcass value and meat quality were determined at a pig progeny testing station in 564 pigs of the breeds Large White (LW), White Meaty breed (WM), domestic Landrace (DL), a synthetic line (SL) and of the SL x Pietrain hybrids. The test started at the weight of 30 kg, slaughter weight ranged from 98 to 103 kg. A UNIFOM S-89 instrument was used after slaughter to determine the percentage of lean meat in dressed carcass, while the spot of measurement was at the level of the 2nd-3rd last but one rib at a lateral distance of 7 cm from the halving section. A day after slaughter and after carcass cooling to the temperature of 2-5 degrees C dissection was done to determine percentages of valuable lean cut (VLC), i.e. neck, shoulder, loin and leg with bone (without separable fat), in the weight of the side of pork. Differences between the percentage of VLCs determined by dissection and the percentage of lean meat determined by UNIFOM S-89 instrument ranged from 1.02 to 2.51 % in the particular breeds, in favor of the VLC percentage in all cases. The UNIFOM S-89 instrument measurements most underestimated the pigs, the ham percentage of which in the weight of the side of pork was higher than 21 %.
