Nata de coco production from coconut sap and nata's effluent

Английский. Two trials with the objective of utility coconut sap and nata's effluent for nata de coco production were carried out of using completely randomized design factorial trial. The result of first trial showed that the brix degree and the pH of media at end of fermentation lower than at beginning. The weight of nata de coco was effected by the voleme of coconut sap and the volume of effluent used. The result of second trial showed that the optimum depth of medium i.e. 30 mm. The nata produced was 21 g/ml and 39.2 g/ml using coconut and water and coconut sap on the raw material respectively. At a production rate of one ton nata/month and optimum condition, the B/C ratio were 1,83 for coconut sap and 1,78 coconut water as the raw material. индонезийский. Penelitian ini terdiri atas dua percobaan yang bertujuan memanfaatkan nira kelapa dan limbah cair nata untuk memperoduksi nata de coco. Rancangan percobaan yang digunakan adalah rancangan acak lengkap percobaan faktorial. Hasil percobaan menunjukkan bahwa derajat brix dan pH medium pada awal fermentasi lebih rendah dari pada akhir fermentasi. Bobot nata dihasilkan dipengaruhi oleh perlakuan volume nira dan volume limbah cair yang digunakan. Hasil percobaan kedua menunjukkan bahwa produksi optimum pada kedalaman media 30 mm; bobot nata dihasilkan masing-masing adalah 21 g/ml media pada bahan baku air kelapa dan 39,2 g/media nira kelapa. Pada skala produksi satu ton/bulan dan kondisi fermentasi optimum, B/C ratio masing-masing 1,83 dan 1,78 pada bahan baku nira dan air kelapa.
