Effects of gradual temperature reduction on the activity and survival rate of pronghon spiny lobster (Panulirus penicullatus) during dry system transportation

Behavior of pronghon spiny lobster (Panulirus penicullatus) during gradual temperature reduction and their survival during dry transportation system had been observed. The gradual temperature reduction was carried out 5 degree C per hour using large and small size lobsters. The survival rate of the lobster was tested after anasthetilization at 16 degree C for 15 minutes followed by storage in cooled sawdust for 9; 12; 15; and 18 hours. The results showed that small and large pronghon spiny lobsters had the same physiological response to gradual temperature reduction, although the small size had 1 degree C higher critical point. The treated lobster showed physiological activities at distinguishable 8 temperature ranges i.e (1) normal activity (25-21 degree C), (2) slightly reduced activity (21-18 degree C), (3) slow and calm (18-16 degree C) (4) still active (16-14 degree C), (5) uncontrollable movement (14-12 degree C), (6) fell down (12-11 degree C), (7) unconscious (10-8 degree C), and (8) dying (7-1 degree C). The survival rate of lobster anasthetized at 16 degree C for 15 minutes and stored in cooled sawdust up to 18 hours was 100 percent
