Effect of pectolytic enzymes on the composition of white grape musts and wines

Английский. The effect of two commercial pectolytic enzymes was investigated on different compounds of the musts and on the fermentation process. Two different enzyme treatments (grape pomace and must) were compared to a non-enzymatic treatment. Settling and clarification processes were improved in the enzyme-treated musts. Generally, the enzyme-treated musts had higher titratable acidity and total polyphenols and lower total pectin content than non-enzyme treated must. During the fermentation of musts, the development of reducing sugars, titratable acidity and total polyphenols were similar in all cases. The wines made from enzyme-treated musts had a lower amount of total pectins and higher titratable acidity, but their acetic acid values were lower than non-enzyme treated wines. The methanol content was higher in the enzyme-treated wines than in the non-enzyme treated wines, but was lower than the legal limit (150 mg/l)

I preparati sono stati aggiunti in due fasi diverse nell'elaborazione, sull'uva prima della pigiatura o al mosto. La composizione dei mosti ottenuti, l'andamento della fermentazione alcolica e la composizione dei vini sono stati misurati e valutati confrontando i mosti e vini trattati con quelli testimone elaborati senza aggiunta dei preparati enzimatici. I risultati mostrano che, in generale, i mosti ottenuti con l'aggiunta di enzimi sono piu' limpidi, contengono una acidita' totale e un contenuto di polifenoli superiore e hanno livelli di pectine piu' bassi. L'andamento della fermentazione e' stato simile per tutti i mosti. I vini ottenuti con l'aggiunta degli enzimi mostrano una composizione diversa dai vini controllo. Le differenze piu' importanti sono: minore quantita' di pectine, piu' elevata acidita' totale, minore acidita' volatile e un livello superiore di metanolo, benche' nessun vino mostrasse livelli di metanolo piu' alti di quelli permessi
