Slaughter value and meat quality of R2 and R3 crossbreds derived from the Polish Merino and the Suffolk crossbreeding

The experimental material consisted totally of 54 crossbreds R2, R3 and the Suffolk lambs. The evaluated group of crossbreds derived from the supplanting crossbreeding of Pilish Merino with the Suffolk race. Slaughter, carcass cutting, partial dissection of flank with ribs and sternum and leg were carried out according to the methods of the National Research Institute of Animal Production. The content of muscle and fat tissues in half-carcasses was estimated by means of regression equations presented by Osikowski. The effect of the lamb genotype and sex on slaughter traits and carcass quality was generally low. The supplanting crossbreds were characterized by higher level of dry matter and fat in muscle tissue than the Suffolks. While analysing physicochemical features of meat, the lowest level of fat was observed in the Suffolk's group. The level of water holding-capacity was high in all groups of the lambs. The rams were characterized by higher value of carcass weight than ewes. The ewes, compared with rams, had higher dressing percentage, more favourable carcass tissue components and water holding-capacity values
