Physiology and technology development has made irrigation and fertilization of vineyards a key point for grape yield and quality, but irrigation water and fertilizers could be in the future highly restricted for environmental reasons. Therefore, it will be necessary to develop adequate strategies that should take into account the diversity of dry-warm and temperate-humid growing zones. Would be today advisable to develop a strategy to grow grapevine without irrigation in the temperate-humid zones? In this frame it appears even more crucial to invest resources in the studies on the relationships among water, nutrients and performance of the vineyard. One of the most striking problems in the present viticulture is the modulation of grapevine vigour in order to acquire the wine quality levels requested by the consumers. The water and nutrient management in the vineyards must be programmed for driving the physiological behaviour of the grapevine towards the biosynthesis of compounds determining the fine quality of the wines. Only if irrigation and fertilization are well in tune and calibrated to the vineyard ecosystem, it is possible to exploit the regulation potential of water and nutrients and to attain consequently both adequate profits and conservation of the natural resources and the environment
