Functional food can be defined as natural food, which has beside its natural nutritional value beneficial effects on human health. Good nutritional habits, including consuming a wide variety of foods and considering the rules of nutritional pyramid, are often not sufficient to satisfy the needs for all essential macro- and micro-nutrients. Modern life-style leads to inadequate nutrient consumption, particularly vitamins and minerals, no matter how well we eat. Many widespread diseases, like cardiovascular disease, cancer, adult-onset diabetes, are related to inappropriate diet. Minerals are one of the nutrient groups, which are essential for normal functioning of human body and benefitial for health. Increasing the amount of naturally occuring minerals in foods is better choise for solving the problem of mineral deficiency than using artificial mineral supplements. Yeast biomass could be a good source of bioaccumulated minerals, since the accumulation of high amount of certain mineral in organically bound form could be achieved by optimization of cultivation parameters. Chromium is an essential element in biological sistems, playing an important role in carbohydrate and lipid metabolism. Inorganic chromium salts, including Cr-picolinate, which has been proven to have toxic effects, have poor intestinal absorption comparing to organic chromium compounds. Chromium enriched yeast biomass represents a source of organically bound chromium.
