Content of conjugated dienes of linoleic acid in meat and milk of different animals species

The aim of the study was to estimate the level of conjugated dienes of linoleic acid of cis-9 and trans-11 configuration in meat and milk of different domestic animals. Considerable amount of the isomer was found in ruminant animals meat while trace amounts of it were detected in monogastric animals and fish meat, based on chromatographic analyses. In the group of rumanants, its biggest amount was stated in lamb meat, then in goat meat while the lowest amount was typical for cows. Chromatographic analyses of ruminants milk also showed considerable variability in the isomer level. The highest amount was found in ewes milk, then in cows milk while the lowest - in goats milk. The comparison of the content of conjugated dienes of linoleic acid c9 t11 in milk ewes colostrum showed its significantly higher level in colostrum
