Influence of a plant diet on breast meat quality of turkey

Английский. A trial was conducted to evaluate the influence of a plant diet on qualitative characteristics of turkey breast meat. Forty-eight BUT Big 6 turkeys were used in a 2 x 2 (two diets, standard vs plant; two sexes, toms vs hens) factorial experimental design. Toms and hens were reared under intensive conditions in separated pens and multi-phase diets were offered ad libitum. The birds were slaughtered in a commercial slaughterhouse at standard ages (13 and 20 weeks for hens and toms, respectively). At 6 h post mortem carcasses were weighed and breast muscles were removed to assess meat quality. Turkeys fed plant diet showed breast meat with slower pH fall [pH sub (15 min): 6.30 vs 6.19, P0.01; pH sub (24 h): 5.70 vs 5.64, P0.05], darker colour in surface (L* 50.8 vs 52.4, P0.01) and inner parts (L* 47.9 vs 49.5, P0.01), and higher WHC. As far as sex is concerned, toms exhibited breast meat with faster pH fall, higher L* values, poorer WHC of both raw and cooked meat, lower protein and higher intramuscular fat contents. These results suggest that the use of a plant diet had relevant effects on turkey breast meat quality

Sono stati utilizzati 48 tacchini BUT Big 6 in un disegno sperimentale fattoriale 2 x 2 (due diete, standard vs vegetale; due sessi, maschi vs femmine). I maschi e le femmine sono stati allevati in condizioni intensive in recinti separati e sono stati alimentati con diete multifase somministrate ad libitum. I volatili sono stati macellati in un macello commerciale alle eta' standard (13 e 20 settimane per le femmine e i maschi, rispettivamente). A 6 h post mortem le carcasse sono state pesate e i muscoli del petto sono stati prelevati per controllare la qualita' delle carni. I tacchini alimentati con dieta vegetale presentavano una carne del petto con caduta piu' lenta del pH [pH inf (15 min): 6,30 vs 6,19, P0,01; pH inf (24 h): 5,70 vs 5,64, P0,05], colore piu' scuro in superficie (L* 50,8 vs 52,4, P0,01) e nelle parti piu' interne (L* 47,9 vs 49,5, P0,01, e WHC (capacita' di ritenzione idrica) piu' elevata. Per quanto riguarda il sesso, i maschi avevano una carne con diminuzione piu' rapida del pH, valori piu' elevati di L*, WHC piu' bassa, sia della carne cruda, sia di quella cotta, contenuti inferiori di proteine e contenuti maggiori di grasso intramuscolare.
