Английский. Mystery and Prime grapes were harvested from ten farms in two growing areas of Israel over two seasons. The grapes were separated on sucrose solutions from 12 to 18% soluble solids content (SSC), titratable acidity (TA) and pH determined and taste tests conducted. SSC gave the best correlation with taste tests and multiple regression of SSC, TA and pH improved the correlation. There were both seasonal and regional differences in the measured maturity parameters. Lower TA and higher pH of grapes from the Jordan Valley were associated with higher potassium content in the berries. It is concluded that Mystery and Prime grapes have good organoleptic quality if harvested at SSC levels of 15% or higher
Показать больше [+] Меньше [-]итальянский. Campioni delle varieta' Mystery e Prime sono stati raccolti in dieci aziende di due aree di coltivazione di Israele, per due stagioni consecutive. I diversi campioni sono stati separati in soluzioni di saccarosio dal 12 al 18%, per poi determinarne il residuo secco rifrattometrico (RSR), l'acidita' titolabile (AT), il pH e per realizzare valutazioni qualitative. I dati relativi ai solidi solubili hanno fornito la migliore correlazione con i test qualitativi; inoltre, tale correlazione e' risultata piu' marcata se espressa come regressione multipla tra RSR, AT e pH. Entrambe le varieta' hanno presentato differenze stagionali e regionali per cio' che concerne i parametri di maturazione. Nell'uva proveniente dalla Valle del Giordano, il piu' basso AT e il piu' alto pH sono stati associati ad un piu' alto contenuto di potassio negli acini. Come risultato conclusivo della sperimentazione, si puo' affermare che le varieta' d'uva da tavola Mystery e Prime palesano buone qualita' organolettiche se raccolte ad un livello di RSR del 15% e oltre
