The physical treatment influence on brewer's spent grain extract nitrogen composition | Влияние физической обработки на азотный состав экстрактов пивной дробины

Английский. The issue of environmentally friendly processing the brewer's spent grain structure has been considered. The influence of environmental methods of processing brewer's spent grain on the extraction of different fractions nitrogenous compounds was studied by the methods accepted in the industry. Extraction was carried out with electrochemically activated water at atmospheric pressure and heating or at overpressure (0.5 and 1 atm). It has been shown that the treatment type or exposure factors affect the content of soluble nitrogen in the extracts. The extracts obtained at the 1st stage of treatment at atmospheric pressure lasting 6 h contained by 21.7% more nitrogenous compounds compared to the extracts treated for 3 h, and an increase in overpressure under catholyte conditions led to a decrease in the content of soluble nitrogen by 17.8%. At 2, 3 stages at atmospheric pressure in catholyte extracts, the soluble nitrogen amount increased by 8.3 and 10%, respectively, with an increase in the treatment duration, and at overpressure (0.5 and 1 atm) — by 82 and 17%, respectively. At stages 1 and 2, the high and medium molecular weight fractions of nitrogenous compounds in total were proportional to the low molecular weight fraction, with the exception of extraction at overpressure. At stage 1, at 0.5 atm, nitrogen with a mass of 8 to 100 kDa was twice larger than the value of amine nitrogen in the control, and at 1 atm, by 5%, which is also presumably associated with the formation of pigments. The extracts obtained at stage 2 at 1 atm had a special ratio of high and medium molecular weight nitrogen to low molecular weight nitrogen of 1.3:1. The most significant influence on the release of thiol nitrogen is the treatment duration (negatively) and temperature (positively). For effectively releasing non-protein nitrogen from the grain structure at stage 1, the process duration is most important, and at stages 2 and 3 the temperature is most important. For recovery of nitrogenous compounds, it is appropriate to use an overpressure of 0.5–1 atm. The optimal extraction temperature is 50 deg. C, the duration is 6 h.

Русский. Рассмотрен вопрос экологичной переработки структуры пивной дробины. Принятыми в отрасли методами изучали влияние экологичных методов обработки пивной дробины на извлечение различных фракций азотистых соединений. Экстракцию проводили электрохимически активированной водой при атмосферном давлении и нагревании либо при избыточном давлении (0,5 и 1 атм). Показано, что тип обработки или факторы воздействия влияют на содержание растворимого азота в экстрактах. Экстракты, полученные на 1‑м этапе обработки при атмосферном давлении, длившейся 6 ч, содержали азотистых соединений на 21,7% больше по сравнению с экстрактами, которые обрабатывали в течение 3 ч, а повышение избыточного давления в условиях католита приводило к снижению содержания растворимого азота на 17,8%. На 2‑м, 3‑м этапах при атмосферном давлении в католитных экстрактах количество растворимого азота увеличивалось на 8,3 и 10% соответственно при увеличении продолжительности обработки, а при избыточном (0,5 и 1 атм) — на 82 и 17% соответственно. На 1‑м и 2‑м этапах высоко- и среднемолекулярная фракции азотистых соединений в сумме были пропорциональны низкомолекулярной фракции, за исключением экстрагирования при избыточном давлении. На 1‑м этапе при 0,5 атм азот массой от 8 до 100 кДа был в 2 раза больше по сравнению с величиной аминного азота контроля, а при 1 атм — на 5%, что предположительно связано с образованием пигментов. Экстракты, полученные на 2‑м этапе при 1 атм, имели особенное отношение высоко- и среднемолекулярного азота к низкомолекулярному - 1,3:1. Наиболее значимо на выделение тиолового азота влияли продолжительность обработки (негативно) и температура (позитивно). Для эффективного высвобождения небелкового азота из структуры дробины на 1‑м этапе наиболее важна длительность процесса, а на 2‑м и 3‑м этапах - температура. Для извлечения азотистых соединений целесообразно применять избыточное давление 0,5–1 атм. Оптимальная температура экстракции - 50 град. С, продолжительность - 6 ч.
