The paper describes the mineral content of milk and whey. It mentions the significance of the main macroelements (calcium, phosphorus) and microelements for the vital functions of the body, stressing the importance of a balanced proportion of calcium and phosphorus ions in nutrition. The need to develop emerging technologies with the production of calcium and phosphorus-enriched concentrates from accessible raw materials, e.g. whey, is emphasised.
