One of the main environmental problems of today's society is the ever-increasing amount of organic waste. After adjusting the fruit load per tree, about 20% of the expected fruit is not used for food purposes. Uncontrolled waste disposal is no longer acceptable today, and energy recovery and recycling of nutrients and organic matter have become a necessity. In the food industry there are not enough known acidifiers of natural origin. Literature review shows that immature apples are a source of valuable nutrients and native organic acids. Natural acidifiers have been experimentally obtained from these fruits. The latter could substitute for chemical/biochemical mono-component acids from the food industry. Also, the production of acidifier from apples will solve two economic and environmental problems.
