Abstract: Practical and theoretical aspects of nutrition are emphasized. Major topics include: 1) an overview of the state of nutrition in the world, including the major problems in nutrition studies; 2) historical nutrition studies; 3) the biological principles of human metabolism; 4) the biochemistry of carbohydrates, fats, proteins, vitamins and minerals; 5) diet planning; 6) food processing methods; 7) additives; and 8) the relationship of special diet to nutrition.
