Abstract: Four classroom workshops on vegetarian diets and cookery are outlined in this set of lesson plans from Consulting Nutritionists of Central Illinois, Inc. Workshop titles include 1) whet your appetite- hors d'oeuvres and thirst quenchers, 2) beans, beans, beans, 3) the bread board, and 4) vegetarian meals that kids love. Lecture topics discussed in conjunction with classroom activities include 1) the class outline and objectives, 2) types of vegetarian diets (total, lacto, ovo, lacto-ovo, fruit), 3) health benefits associated with well-planned vegetarian diets, 4) protein complementarity, and 5) recommendations for following a vegetarian diet. Recipes, ingredient quantity lists, and preparation instructions accompany each lesson plan. Handouts include 1) a grain texture and usage chart, 2) a cooking chart for various grains and beans, 3) a chart of bread baking ingredients, and 4) a graph showing the saturated fat content of selected foods.
