Abstract: Guidelines for planning and implementing nutrition counseling workshops are outlined for nutrition educators in this guidebook from the U.S. Department of Health and Human Services. Recommended strategies and procedures are based on several projects conducted at the University of Iowa and the University of Pittsbrugh in which various nutrition counseling strategies were developed and field-tested. A seven-step process for designing a nutrition counseling workshop is outlined: 1) identify participants and sponsors, 2) determine needs and interests of participants, 3) assess available resources (time, facilities, expertise), 4) select learning experiences, 5) create an agenda, 6) customize learning experiences to audience and presenter needs, and 7) plan evaluation strategies. Important considerations in carrying out each step are discussed. Logistical concerns in workshop planning are addressed. Appendices present a learning experience inventory form, a session planning form, and descriptions of alternate workshop structures. The guidebook is intended to be used in conjunction with two companion volumes; a workshop resource manual and a training outline for conducting nutrition counseling workshops.
