The vitamin B6 content of selected frozen convenience foods

Extract: Studies have suggested an increased consumer demand for food items that save time in meal preparations (1). The nutrient content of the pre-processed convenience foods is lacking in many instances. In an effort to provide data on the nutrient content of frozen convenience foods and to further the body of knowledge on vitamin B6 intake in the American diet, this study was designed to determine the total vitamin B6 content of 147 selected frozen convenience foods. The microbiological method of Toepfer and Polansky (2) was used and values were expressed in terms of vitamin B6 per 100 g. and per serving as defined by the food manufacturer. This information will make it possible for dietitians and nutritionists in clinical and research settings to make more accurate assessment of the vitamin B6 nutriture of individuals.(author)
