The dietary patterns of Southeast Asians are based on rice, soya beans, fresh produce, tea, poultry, pork, and fish. Refugees from Southeast Asia frequently have difficulty adjusting to American Foods; reasons most often cited are dislike of the food's texture, flavor, and high fat content. In addition, the problems of locating ethnic foods or recognizing similar foods in the supermarkets seem to contribute to dietary inadequacies. Efforts to help improve refugees' diets should focus on teaching them how to incorporate native foods and cultural habits into the existing circumstances, rather than only adapting to American eating customs.
