Sulfur dioxide-supplemented ambient air drying of high-moisture corn

The extension of the time for safe ambient air drying by inhibiting microbial growth with SO2 gas was investigated. In laboratory tests, 25% moisture corn was treated with 0.01-1.82% SO2/corn (w/w). Under conditions ideal for mould growth, corn treated with ≥0.4% SO2 withstood microbial deterioration for several wk. In field tests, application of SO2 reduced the initial microbial count in freshly harvested corn. Subsequent intermittent treatment maintained low counts until the completion of ambient air drying. No adverse effects on corn quality due to the 'trickle-SO2' process were observed, as measured by official grading, fatty acid analysis, thiamin analysis and corn dry milling results (vs. high microbial counts and visible deterioration in an untreated control.) S residue levels in the grain (determined 21, 54 and 127 days after the start of the test) were not significantly increased by the treatment.
