Determination of the collagen, elastin and bone content in meat products using television image analysis

A method for automated determination of surface areas based on television image (TVI) analysis was applied to the quantification of new and gelatinized collagen, elastin, and bone particles in histological slides of commercial meat products, and synthetic meat-collagen or meat-elastin mixtures. The TVI analysis results were highly correlated with results obtained by the point count technique, chemical analysis of bone content, and with the known content of collagen and elastin in the synthetic mixtures.
