Management of solid waste will become a priority issue for school food service directors as the number of landfills reach capacity during the 1990s and the cost of waste disposal increases. Food service operations can help alleviate the landfill crisis through recycling and source reduction. Decisions directors make regarding market form of food, packaging materials for convenience items and type of serviceware all impact the weight and volume of solid waste generated and ultimately the cost of waste disposal. This article presents an overview of solid waste management and discusses various alternatives for controlling solid waste in school food service operations.
