Effect of storage and insect infestation on thiamine and niacin content in different varieties of rice, sorghum, and legumes

Extract: The effect of storage with and without insect infestation of rice, sorghum, pigeon pea, green gram and chickpea for a period of twelve months on thiamine and niacin content has been studied. The results showed that the loss in thiamine content was higher compared to niacin. Thiamine losses were low in case of rice (20 - 30 per cent) and chickpea (10 - 15 per cent) and high in case of sorghum, pigeon pea and green gram (40 - 70 per cent). Insect infestation, caused further decrease in thiamine and niacin content.(author)
