A literature review is provided regarding the effects of various selected factors (age, species, breed, and sex) on the characteristics, composition, and level of the main protein of animal hide, collagen. While principally used previously for leather, animal hide may find expanded use as a protein food additive for meat and meat products. Collagen currently is being generated from hand-separated meat for restructuring, from desinewed meat, and from bone. Hide age appears to cause an increase in the physical strength of the collagen fiber (via increased molecular cross-linking of the polymer), and an alteration in the amount of soluble and insoluble collagen.
