Dietary intake of sweet foods and of dairy fats and resultant gustatory responses to sugar in lemonade and to fat in milk

In a study of gustatory responses, participants completed detailed questionnaires concerning their intakes of sweet foods vs. dairy products and fat. The study assessed the frequency of sweets and expressed preferences for low vs. high sugar items as related to a perceived intensity of sweetness or degree of liking for experimental lemonade having a widely-varying sugar content; or whether intake dairy fats was related to the perceived intensity of fat or degree of liking of fat added to experimental milk. Perceived taste intensity generally was found to be an increasing linear function of the concentration of the additive, while hedonic responses were found to be more parabolic. Specific details of the findings and their implications are discussed. (wz)
