The place of dietary fibre in our diet

The complex question of the role of dietary fiber in human diets and in bowel function is explored. Associations between the fruit and vegetable content of the diet, low serum lipids and the treatment of diverticular disease, constipation and the irritable bowel syndrome are discussed. A physiochemical approach to vegetable dietary fiber is explained. Methods for calculating the physical properties of vegetable dietary fiber are reviewed. Changes in carrots through the centuries are described.
