Cholesterol and fatty acid content in three species of crab found in the Northwest Atlantic

Three species of crab, Jonah crab (Cancer borealis), rock crab (Cancer irroratus), and red crab (Geryon quinquedens) were studied to determine their fatty acid and sterol contents. Cholesterol accounted for 96% of the sterol content and represented 7.1, 5.9, and 8.7% of the total fat for the Jonah, rock, and red crabs, respectively. Polyunsaturated fatty acids (PUFA) represented 40% of the fatty acid content, with 20:5w3 being the most abundant PUFA. There was little difference in fatty acid and cholesterol contents among the 3 species studied and fatty acid profiles did not significantly differ from other commercially important crabs. (ds)
