Dietary fiber in Spanish fruits

A table of the dietary fiber, cellulose, hemicullulose, lignin, and peptic substances content of actual samples of 21 Spanish fruits is presented. In some cases, analysis of more than 1 variety of fruit or degree of ripeness is available. Fiber values for the same fruits as found in nutrition literature are indicated in a second table. Considerable variation was found for the same fruit among different investigators. In general, fruit is not high in fiber; it ranged from 2.5% for ripe plantain to 0.2% for watermelon. Quantities of the various fibers in an average serving of each fruit are indicated in a third table. (emc)
