Ice cream freezers are essential equipment for the frozen dessert business. Characteristics of a dependable freezer include constant freezing temperatures, mechanical and cryogenic features. Freezers that defrost automatically but remove excess condensation are important to prevent the formation of ice crystals which cause the quality and texture of ice cream to deteriorate. Capacity should be based on business volume. Tempering freezers and dipping cabinets are 2 pieces of equipment that ensure ice cream will be at its best quality and ready for dipping.
