Staphylococcal food poisoning outbreaks caused by canned mushrooms from China

Because of the outbreaks, the U.S. Food and Drug Administration placed all mushrooms imported from China on automatic detention. What made these outbreaks so unusual was the fact that canned foods had rarely been implicated in an outbreak of staphylococcal food poisoning. How then did this occurrence happen? And were there ways to prevent it from happening again? Nature's Farm Products, Inc., Hayward, Calif.-- the leading importer of canned mushrooms from China--retained a team organized by Pharmaceutical Pharmaceutical and Food Specialists, San Jose, Calif., to investigate the source of the outbreak, present the findings to FDA, and recommend corrective steps. The team consisted of a processing specialist (Hardt- English), a packaging specialist (Cocotas), and two microbiologists (York and Stier). This article will describe the study they conducted and their recommendations.
