Particular attention must be paid to final nutrient content and level of use of food additives in new sources of protein to insure safety from microbial growth and toxic substances. A history of the use of novel proteins is presented, with emphasis on the single cell protein introduced in the early 1960's. The carcinogenicity of nitrates and nitrites is discussed in detail. The lack of recent food research in the United States is reprimanded. Several areas for food scientists to concentrate on to keep the U.S. in its leadership role in dealing with food problems are enumerated.
