Quantitative effect of an isoenergetic exchange of fat for carbohydrate on dietary protein utilization in healthy young men

Because the nitrogen (N) balance is affected by dietary protein and energy intake, it can be used to assess protein utilization and requirements. Half of a group of 10 male college students ate a 1:1 carbohydrate:fat ratio diet for 21 days while the other half ate a 1:2 ratio diet. After a break the groups switched diets for another 21 days. In the 1:1 ratio diet, 6 subjects had a negative N balance, but 8 improved on the 1:2 ratio diet. Energy intake and N balance correlated strongly with 2.6 mg N/kg body weight and 1.3 mg N/kg body weight retained for each additional kilocalorie per kilogram of total energy intake for the 1:1 and the 1:2 ratio diets, respectively. N utilization improved and blood urea N was reduced significantly with the 1:2 ratio diet. Serum cholesterol levels and serum triglyceride levels on day 14 decreased significantly on the 1:1 ratio diet. The isoenergetic exchange of dietary fat for carbohydrate demonstrated a significant measurable effect on protein utilization and metabolism.
