Vitamin C content of fresh spinach

Extract: A survey of the vitamin C levels in commercially packaged and field grown fresh spinach revealed substantial variability in its vitamin C content. The average L-ascorbic acid content for samples of the commercially packaged produce was 35.6 and 51.7 mg/100 g fresh weight for 1981 and 1982 respectively. Storage of field grown spinach under conditions simulating commercial marketing resulted in vitamin C losses as high as 90% of "field level." Minor modifications necessary to improve the accuracy of standard analytical procedures are also reported. (author)
