N-Nitroso compounds: A perspective on human exposure

Personal views of the author with respect to the mechanisms of human exposure to N-nitroso compounds are presented together with a review of relevant literature. Topics considered are: the capabilities of analytical methods; environmental sources of N-nitroso compounds; their formation internally from nitrate, nitrite, and other nitrogen precursors; and the potential relationship between endogenous nitrite in gastric juice and cancer etiology. The view is expressed that the endogenous formation of N-nitroso compounds represents the greatest part of the overall body burden, and may provide the greatest opportunity for achieving a positive health effect through active intervention to prevent carcinogen formation. The possibility of diminishing carcinogenic risk from exposure routes of N-nitroso compounds by changes in lifestyle and/or by dietary modifications is debated. (wz)
