Studies on Enhancing the Phenolic Content of Fenugreek(Trigonella foenum graecum L.) Sprouts

The phenolic content in fenugreek sprouts could be enhanced by treating with natural exogenous elicitors with antioxidant potential such as folic acid and ascorbic acid. In the current study, the phenolic-enriched extracts were evaluated for their effectiveness in inhibiting -amylase and α-glucosidase activity. The results showed that phenolic-enriched extracts had the ability to inhibit α-amylase and α-glucosidase activity. Ascorbic acid (500 μM) elicited fenugreek sprouts had thehighest phenolic content of 71 mg/100g FW on day 8 which also resulted in highest enzyme inhibiting activity of 38% in case of á-amylase and 42.5% in case of á-glucosidase inhibiting activity on 8ᵗʰ day. These results indicated that fenugreek sprouts when incorporated into the diet could contribute to potential management of hyperglycemia linked diabetes.
