A long-range program of sampling and analyzing grapefruit and oranges from California and Arizona focused on nutritional values for kilocalories, vitamins, minerals, and soluble solids. Since fat and protein are present in negligible amounts, caloric content was calculated from established values. New techniques are yielding higher and more accurate values for easily destroyed nutrients, such as the folates. Ascorbic acid content is high, of course, as are folic acid, magnesium, vitamins A (oranges only) and B6, and thiamin. Niacin and calcium are approximately in proportion to caloric content.
