Gas chromatographic analysis of sugars in granola cereals

The sugar composition of 14 granola cereals from 7 different manufacturers was analyzed by gas chromatography. Total sugar content ranged from 22-32% on a dry weight basis. Sucrose was present in highest amount, with all cereals containing lesser and varying amounts of fructose and glucose; 6 cereals also contained lactose. "Extra" sugar in all cereals was represented by glucose and fructose, and was contributed by fruit (dates and raisins) added to the cereals. Although corn syrup and/or honey was listed as an ingredient in all brands tested, the absence of maltose indicates they are added in very small amounts. Five cereals showed a significant difference in total sugar content between lots.
