North Dakota Indians' traditional foods
1980
Toma, R.B. | Curry, M.L.
The Indians of North Dakota were nomads and huntsmen, with some agriculture practiced; the resulting traditional diet included such ingredients as onions, cabbage, squash, corn meal and small amounts of meat. The nutritional value of this diet was calculated from a collection of recipes and the Agriculture Handbook No. 8 for energy, protein, several vitamins, calcium and iron. The Nutrient Calorie Benefit Ratio was found adequate for all food combinations tested except corn bread and Indian fried bread; ironically, these are the only dishes still eaten regularly by the Indians.
