Evolution of oil accumulation and polyphenol content in fruits of olive tree (Olea europaea L.) related to different irrigation strategies

The aim of this work is to study the evolution of fruit ripening of olive trees (Olea europaea cv. Arbequina) under different irrigation strategies: regulated deficit irrigation (RDI) strategy and linear irrigation strategy. The fruit ripening index, oil accumulation and phenolic content were analysed. There were no substantial differences between regulated deficit irrigation treatments in all parameters analysed. In relation to the linear irrigation strategy, the fat content of olive flesh at harvest was not affected although olives from the most heavily irrigation treatments, reached their final fat content earlier than under other irrigation treatments. Phenolic content decreases during fruit ripening and was affected by linear irrigation strategy being lowered as the water supplied increased.
