Experiments with wild rice subject of Illinois report

Experimental runs are described in which wild rice (Zizania aquatica L.) is processed in a continuous manner, primarily to condition it for dehulling but with some attendant drying. Processing for as little as 5 min under high humidity, high-temp. conditions, followed by drying in a forced-air oven at 47° C, resulted in 80-85% whole kernel yield, which is comparable to commercial batch processing. No added steam was needed at ≥40% kernel moisture content. Amylograph evaluation showed that the degree of gelatinization was more complete with prolonged steaming. Steaming also made for easier hull removal than direct drying. Cooking tests showed no white centres and water absorption of 14.6-19.6 g/20 g. Only lysine and arginine contents decreased with increase in processing time.
