Preservation of high-moisture corn: a microbiological evaluation

Maize grain, moisture content 27%, in lots of 52.8 m3 was treated with NH3, ammonium isobutyrate, isobutyric acid and propionic and acetic acids (4:1) to give respective contents of 0.5, 1.75, 1.5 and 1.2% and was stored in partially open wooden bins for 6 months. Fresh grain had log counts of bacteria 6.3, moulds 5.8, yeasts 5.3 and actinomycetes 3.0/g. All chemicals immediately reduced bacterial and actinomycete counts and eliminated moulds and yeasts. After about 30 days there was secondary fungal growth. Scapulariopsis brevicaulis predominated on grain treated with NH3; Mucorales and species of Monascus, Pencillium, Fusarium, Aspergillus flavus and A. fumigatus were in maize treated with ammonium isobutyrate. A. flavus was the predominant mould late in storage of seed treated with isobutyric or propionic and acetic acids.
