Evaluation of barley distillers dried grain: protein quality of unprocessed and milled fractions

Barley distillers dried grain (BDDG) and whole barley were obtained from a commercial distillery. A portion of the BDDG was milled through a laboratory flour mill producing fine and coarse fractions. These milled products along with the unprocessed BDDG and barley were analyzed for proximate components, fiber and amino acids. Protein content ranged from 17.2 to 30.0% (dry basis) in the unprocessed BDDG and the two milled fractions and were all relatively high in fiber (8.9 to 27.3% CF). The fine milled fraction contained the greatest percentage of protein, lysine, and the least fiber of the three samples. Lysine levels were highly related to total protein content in the BDDG, although expressed as a percentage of recovered amino acids acids, lysine was highest in the coarse milled fraction. Two rat feeding trials and a lysine availability trial indicated that lysine was the limiting amino acid in BDDG and lysine availability was 86.8% assuming 100.0% for l-lysine.
