Trends in the consumption of animal products, and factors that may change these patterns, are reviewed. A discussion of health related issues initiates the article. The consumption of poultry products, red meats and dairy products for the years 1960-1975 is summarized. Consumer acceptance studies for beef, pork, lamb and mutton, processed meats, and dairy and poultry products are described. A discussion of soy proteins as meat extenders includes sections on types, special products, nutritive value and consumption trends.
