Determination of moisture content in glycerol-containing intermediate moisture foods

Gravimetric procedures (oven or vacuum oven) used in determining the moisture content of glycerol-infused intermediate moisture beef often present technical difficulties. The standard procedures may give inaccurate results because of glycerol evaporation, with the magnitude of error dependent on operating conditions. A low-temperature (40 degrees C) oven drying procedure is recommended since results indicated that this gravimetric determination permits "selective" separation of water, thus providing a reasonably accurate measure of moisture content.
