To the people of Indian communities, 'hot' and 'cold' food beliefs are not idle superstition but concepts that are important and meaningful to them, especially during periods of physiological stress. The 'hot cold' classification of commonly used foods originates from the ancient Hindu medical system. Most foods with a pungent, acidic, or salty taste are considered 'hot' and foods with a sweet, astringent or bitter taste are 'cold.' Classification systems from different parts of India vary.
